
Pear & Almond Muffins
Ingredients
- 2 eggs
- ½ cup milk
- ½ cup extra light olive oil
- ¾ cup caster sugar
- 300g canned pears, mashed
- 1 cup wholemeal self raising flour
- 1 cup self raising flour
- 1 tsp cinnamon
- ½ cup Freshlife Australian Slivered Almonds
- Extra Freshlife Australian Slivered Almonds and brown sugar for topping
Method
- Preheat oven to 180°C and grease 12-hole muffin pan.
- In a large bowl, whisk together eggs, milk, oil and sugar. Stir in pear.
- Add flours, cinnamon and Freshlife Australian Slivered Almonds and mix until just combined.
- Divide mixture between muffin pan and sprinkle tops with extra Freshlife Australian Slivered Almonds and brown sugar.
- Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Remove from pan. Place on wire rack. Serve warm.
