Ingredients: ? 250g FreshLife Prunes ? 125g FreshLife Dried Apricots ? 125g FreshLife Figs ? 125g FreshLife Raisins ? ¼ cup raw sugar ? 1 tablespoon rosewater ? 1 teaspoon coriander seeds [bruised] ? 1 strip orange zest ? Juice of ½ lemon ? 60g FreshLife Slivered Almonds [toasted] ? 30g FreshLife Pine Nuts [toasted]
Method: 1. Put all fruits in large bowl. Sprinkle with sugar & rosewater. Add water to cover & stir. Cover with plastic wrap & leave overnight in cool place. 2. Transfer mixture to saucepan adding extra liquid just to cover if needed. 3. Tie coriander seeds in muslin bag & add to pan with orange zest. 4. Bring to the boil, reduce heat & simmer for 10 minutes. Allow to cool slightly. 5. Remove coriander seeds & stir in lemon juice to taste. 6. Serve warm or chilled, sprinkled with almonds & pine nuts.
Note: For a healthy breakfast, serve with Bircher Muesli and extra yoghurt on the side. Also ideal as a side dish with pancakes, crepes, etc. Can also be served as a dessert with ice cream, yoghurt, etc
Store covered in fridge for 3-4 weeks.
