Ingredients: Stuffing: • 1kg rolled turkey breast or thigh • 1 ½ tablespoons (15g) FreshLife Currants • 2/3 cup (80g) FreshLife Pine Nuts • 6 FreshLife Dried Apricots, finely diced • 6 FreshLife Pitted Prunes, finely diced • 2 slices grain bread, crusts removed • 3-4 sprigs parsley • 1 small onion, finely diced • 1 slice bacon, finely diced • 2 tablespoons oil • 1 small egg • 1 tablespoon apricot nectar • String for tying Apricot Glaze: • 8 FreshLife Dried Apricots • 2 tablespoons Honey • 2/3 cup apricot nectar • ½ cup water • 3 tablespoons barbeque sauce • 1 teaspoon fresh ginger
Method: Stuffing: 1. Place turkey, skin side down on chopping board and cut it almost in half, open it out into a rectangle and set aside. 2. Process bread and parsley until it resembles crumbs. 3. Sauté onion and bacon until soft; allow to cool before adding into breadcrumb mixture. 4. Mix dried fruit and nuts into the bread mixture. 5. Whisk egg and apricot nectar in small bowl, add to breadcrumbs and mix well. 6 Spread the filling along the centre of the turkey, fold sides to cover stuffing and tie with string. Trim turkey meat if necessary 7. Lightly oil pan and brush a little oil over the top of the turkey 8. Roast in pre-heated 180 °C oven for 1 hr, 10 minutes, brushing with apricot glaze and pan juices until golden brown Apricot Glaze: 1. Boil the apricots with the honey, apricot nectar and water until the apricots are tender. 2. Add barbeque sauce and ginger and puree until smooth.
