Ingredients: • 750g asparagus [trimmed] • 1/3 cup FreshLife Hazelnuts [toasted, coarsely chopped] Dressing: • 1/4 teaspoon freshly grated orange zest • 2 teaspoons fresh orange juice • 1 teaspoon fresh lemon juice • 1/2 teaspoon sugar • 2 tablespoons olive oil
Method: 1. Plunge asparagus into boiling salted water and cook for 4 - 6 minutes until crisp and tender. Drain well. 2. Combine dressing ingredients and season to taste. 3. Transfer asparagus to serving plate. Spoon dressing over top and sprinkle with Hazelnuts.
Note: Note: Green beans are an alternative to asparagus when it is out of season.
