Chicken, Almond & Broccolini Stir Fry

Ingredients:
• 350g Singapore noodles
• 2 tablespoons olive oil
• 2/3 cup FreshLife Natural Almonds [whole]
• 750g chicken breast [thinly sliced]
• 1 red onion [cut into thick wedges]
• 2 bunches broccolini [trimmed and cut in half]
• 1/2 cup oyster sauce


Method:
1. Place noodles in strainer and rinse under hot running water and set aside.

2. Heat 2 teaspoons of oil in a wok over high heat. Stir fry almonds for 1 minute. Remove and cool.

3. Add another 2 teaspoons of oil and stir fry chicken pieces in batches. Remove and drain.

4. Add remaining oil to wok, toss in onion and cook until tender. Add broccolini to wok, stir and cook until bright green.

5. Return chicken to wok, add oyster sauce and cook until heated through. Add noodles and almonds - stir fry a further minute. Serve immediately.
