Ingredients: • 1/2 cup FreshLife Hazelnuts • 1/2 cup FreshLife Slivered Almonds • 1/2 cup FreshLife Diced Apricots • 1/2 cup red & green glace cherries • 160g almond nougat • 1 teaspoon grated orange rind • 1 tablespoon Grand Marnier (optional) • 1/3 cup thickened cream • 2 cups milk chocolate buds • 1 cup dark chocolate buds • 15g copha
Method: 1. Combine the nuts, fruit, nougat, rind and liqueur and mix well. 2. Cover and stand at least 3 hours or overnight. 3. Heat the cream in a small pan until almost boiling and remove from heat. Add the milk chocolate buds and mix until the chocolate has melted and the mix is smooth. 4. Add the chocolate mix to the mix that had been standing and combine well. 5. Roll into logs using baking paper and refrigerate until set (approx 1 hour). 6. Melt the dark chocolate bits and copha in a bowl in the microwave and stir until smooth or heat in a small saucepan, stirring until smooth and remove from heat. 7. Coat the logs with the dark chocolate mix, place onto baking paper again and allow to harden in the fridge. 8. Slice to serve.
