Christmas Fruit & Nut Ice Cream Pudding

Ingredients:
• 1/3 cup FreshLife Hazelnuts [toasted and chopped]
• 1/3 cup FreshLife Brazil [roughly chopped]
• 1/4 cup mixed peel
• 1/2 cup FreshLife Sultanas
• 1/3 cup rum
• 1 litre vanilla ice cream
• 1/2 cup glace cherries [chopped]
• 1 teaspoon ground cinnamon
• 1 litre chocolate ice cream
• 1 teaspoon mixed spice


Method:
1. Add nuts, mixed peel, sultanas and rum into bowl, cover and allow to sit overnight. Also, freeze a 2 litre serving bowl over night.
2. Soften vanilla ice cream, add cherries and ground cinnamon, combine. Press ice cream inside chilled bowl, spreading evenly to cover base and sides. Freeze over night.
3. Soften chocolate ice cream; add fruit, mixed spice and nut mix and combine to ensure spread evenly. Press chocolate ice cream to cover vanilla ice cream in chilled bowl. Smooth on top and tap to ensure no air pockets.
4. Freeze overnight. When ready to serve, turn over onto plate and cut into slices.
