Ingredients: • 1 tablespoon whole coriander seeds • 1 tablespoon whole cumin seeds • 1/4 cup sesame seeds • 1/4 cup sunflower seeds • 1/2 teaspoon dried mint • 1/2 teaspoon cracked black pepper • Salt to season • 1 cup FreshLife Hazelnuts [toasted] • 1 cup FreshLife Almonds [toasted]
Method: 1. Scatter nuts on tray and toast in preheated oven, 180°C for 10 minutes stirring frequently to prevent burning. 2. Toast seeds and pepper together in a pan over medium–high heat. Cook evenly to allow flavour to develop. 3. Allow all ingredients to cool completely before adding to blender and pulsing to resemble small breadcrumbs. Add salt to season.
*Tip: Mixture should be very dry and crumbly, not a paste. Keep stored in an airtight jar. Great for sprinkling on salads, grilled vegetables or use as a coating for fish.
