Ingredients: • 250g cold butter [cut into cubes] • 2 and 1/2 cups plain flour • 3 tablespoons rice flour • 2/3 cup castor sugar • 3/4 cup FreshLife Macadamias [finely chopped] • Extra caster sugar for dusting
Method: 1. Combine butter, flours and sugar in food processor and blend until dough is formed. 2. Remove from food processor and add macadamias to dough and knead lightly to distribute nuts. 3. Press dough into baking paper lined 18 x 28cm lamington pan. Refrigerate for one hour. 4. Sprinkle with a small amount of caster sugar and cook in a moderate oven 180°C for 30 minutes or until golden brown. Cut into fingers while still warm.
