One Pot Almond Moroccan Lamb

Ingredients:
• 1 tablespoon vegetable oil
• 400g diced mutton [leg or shoulder meat]
• 250ml chicken stock
• 1 small onion [finely chopped]
• 75g FreshLife Prunes Pitted [halved]
• 50g FreshLife Apricots [halved]
• 1 tablespoon tomato paste [triple concentrate]
• 1/2 teaspoon FreshLife 100% Ginger
• 1/2 teaspoon ground cinnamon
• 1/8 cup FreshLife Slivered Almonds [toasted]
• Salt and pepper to season


Method:
1. Heat oil in large saucepan, add meat and cook until well browned. Add all the remaining ingredients [except the almonds] and season with salt and pepper.
2. Bring to the boil, then reduce the heat and simmer covered for about 1 hour or until meat is tender.
3. Garnish with almonds and serve with rice.
