Ingredients: • 1/4 cup extra virgin olive oil • 1 cup FreshLife Pepitas • 2 large garlic cloves [crushed] • 1/4 cup water • 1/2 cup coriander [coarsely chopped] • 2 spring onions [chopped] • 1 and 1/2 tablespoons White Vinegar • Salt and pepper
Method: 1. Heat 2 teaspoons oil in frying pan over moderate heat and cook pepitas with salt and pepper, to taste, stirring constantly until seeds are puffed and beginning to pop [about 4 minutes]. 2. Add garlic and cook stirring for 1 minute. Transfer to plate and cool completely. 3. Pulse seed mixture in food processor with remaining oil and ingredients. Add salt and pepper to taste. Use as required.
Serving Suggestion: Spread on toast triangles and serve with a spicy pumpkin soup.
Note: Pepita pesto can be stored in the refrigerator for up to one week in an airtight container simply by pouring a thin layer of oil over the surface of the pesto.
