Spicy Pork and Macadamia Stir Fry

Marinade:
• 1 tablespoon medium dry Sherry
• 2 teaspoons cornflour
• 1/4 cup soy sauce
• 2 teaspoons sesame oil
• 1 teaspoon sugar

Ingredients:
• 4 pork loin chops [cut into 5x 1/2cm thin strips]
• 1/4 cup oil
• 2 teaspoons FreshLife 100% Ginger
• 1 teaspoon FreshLife 100% Garlic
• 1/4 teaspoon dried chilli flakes
• 1 large red pepper [cut into 1/2 cm thick strips]
• 250g snow peas or green beans [trimmed]
• 90g packet FreshLife Macadamia Nuts


Method:
1. Stir together the marinade ingredients, add pork, toss to coat and stand for 10 minutes.
2. Heat oil in a wok over high heat. Lift pork from marinade and stir fry for 2 minutes until partly cooked. Toss through ginger, garlic and chilli flakes. Add red pepper, snow peas or green beans and Macadamia Nuts and stir fry for 1 minute. Add marinade and cook a further minute. Serve with rice.
