Spinach, Fetta & Walnut Salad

Ingredients:
Salad
• 160g baby spinach leaves
• 450g jar fire-roasted and peeled, whole peppers [drained, patted dry, and roughly chopped]
• 100g fetta cheese
• 100g FreshLife California Walnuts

Dressing:
• 20g sun-dried tomatoes [not in oil]
• 1/2 cup boiling water
• 1 teaspoon FreshLife 100% Garlic
• 1 teaspoon wholegrain mustard
• 1 and 1/2 tablespoons red wine vinegar


Method:
1. Arrange spinach leaves on a serving platter. Sprinkle over the walnuts, peppers and fetta.
2. To make the dressing. Place sun-dried tomatoes in a small heatproof bowl. Pour over the boiling water. Set aside for 10 minutes, then drain, reserving the water.
3. Using a food processor, blend the sun-dried tomatoes, garlic, mustard and vinegar until smooth, adding enough of the reserved water to make a drizzling consistency.
4. To serve, drizzle dressing over the salad.
