Ingredients: • 1 x 400g can chickpeas [rinsed, drained and patted dry] • 4 cups vegetable oil • 1 small orange sweet potato [peeled] • 1/2 cup FreshLife Pepitas • 3 x 10cm long red chillies [cut into 3mm thick slices] • 1/4 cup FreshLife Raisins • 1 teaspoon sugar • 1/8 teaspoon cayenne pepper • Salt to taste
Method: 1. Arrange chickpeas on paper towel to air dry while frying other ingredients. 2. Heat oil in a 4 litre heavy saucepan or wok over moderate heat until 180ºC. 3. Use a peeler to shave 2 cups of thin strips from the sweet potato. Fry 1/2 cup at a time until golden and just crisp, for about 1 minute, then drain on paper towels. 4. Cool oil to 170ºC and fry Pepitas in 2 batches, covered [seeds will pop and splatter], until puffed but not brown, for 30 - 60 seconds. Drain on paper towels. 5. Fry chilli until crisp but still red, for about 1 minute. Drain on paper towel. 6. Fry chickpeas in 2 batches until golden and crisp throughout, for 5 - 10 minutes, then drain on paper towels. 7. Toss together all ingredients and serve warm or cool.
