Ingredients: • 200g bacon [cut into thin strips] • 1/2 cup FreshLife California Walnuts • 50ml extra virgin olive oil • 75ml lime or lemon juice • 200g chopped lettuce or baby spinach leaves • 1 punnet cherry tomatoes • 2 spring onions [chopped] • 1 ripe avocado [peeled and sliced] • Salt and pepper to taste
Method: 1. Cook bacon in a non stick frying pan until crisp. Drain on absorbent paper. 2. Add walnuts to pan and cook until golden. Remove from pan. 3. Combine oil, lemon juice and shake. 4. Arrange lettuce, tomatoes, spring onions and avocado in a large bowl. 5. Sprinkle walnuts and bacon over the top and pour the dressing over and toss.
