Ingredients: • 1 x 1.5kg chicken, cut into 8 pieces • 1 large white onion [diced] • 4 tablespoons butter • 1 bay leaf • 1 sprig fresh thyme • 1 cup milk • 2 egg yolks • 1 teaspoon grated nutmeg • 1 cup FreshLife Walnuts [roughly chopped] • Salt and pepper seasoning
Method: 1. Wash and dry the chicken, cut into parts and season lightly with salt and pepper. In a heavy fry pan, sauté the onion in butter until soft and translucent. 2. Add chicken pieces and brown all over, add bay leaf and thyme and enough hot water to cover chicken. Cover and simmer chicken for approximately 1 hour. 3. Using a slotted spoon, remove chicken to a platter and keep warm while you prepare sauce. 4. Mix milk and egg yolks in bowl and slowly add to boiling sauce. Add nutmeg and walnuts, stir until sauce begins to thicken. 5. Pour sauce over chicken and serve with rice and salad.
