Ingredients: • 1 tablespoon olive oil • 1 medium onion [finely chopped] • 1 leek [finely chopped] • 2 celery sticks [finely chopped] • 225g mushrooms [chopped] • 2 teaspoons FreshLife 100% Garlic [minced] • 425g can brown lentils [drained] • 1 cup FreshLife Cashews [ground] • 50g potato flour • ½ cup grated cheese • 1 egg [beaten] • ½ cup FreshLife 100% Parsley [chopped] • Salt and pepper to serve
Method: 1. Preheat oven and lightly grease loaf tin. 2. Heat oil in saucepan, add onion, leek, celery, mushroom and garlic and cook until all vegetables are soft. 3. Add remaining ingredients, mix well and season to taste. 4. Spoon mixture into tin, level out surface and bake, uncovered for 50-60 minutes, or until browned on top and firm to touch. 5. Cool slightly before removing from tin. Loaf can be served hot or cold with fresh garden salad.
