Ingredients: • 4 x snapper fillets (small size) • 75g FreshLife Almonds Natural [roasted and ground] • 75g FreshLife Pine Nuts [roasted and ground] • 1 small white onion [chopped finely] • 1 teaspoon FreshLife 100% Ginger [minced] • 1 teaspoon FreshLife 100% Garlic [minced] • 1 tomato [chopped finely] • ½ cup cooked rice • ¼ cup sun-dried tomatoes • ½ tablespoon dried tarragon • ¼ teaspoon lemon rind • Salt & cracked black pepper
Method: 1. Preheat oven to 190°C. Place almonds and pine nuts onto tray and roast for 5 minutes, allow to cool, blend to breadcrumb consistency. 2. Heat oil and fry onion, ginger and garlic until soft and translucent, stir in tomatoes, rice and nuts and cook for a few minutes. Add herbs, lemon rind and season to taste. 3. Place one fillet, skin side down on foil-lined tray. Spread mix over top and layer with another fillet. Wrap with foil. Repeat for next 2 fillets. Cook in oven for 20-25 minutes, serve hot with sliced tomato and marinated olives.
