Lentil Rissoles

Ingredients:
• 2 cups yellow split peas
• 1 cup FreshLife Walnuts [chopped]
• 150g FreshLife Almonds Blanched [ground]
• 1 egg [beaten]
• 1 teaspoon FreshLife 100% Garlic [minced]
• ½ red onion [grated]
• ½ carrot [grated]
• ½ celery stick [grated]
• ½ cup cooked rice
• ½ cup FreshLife 100% Parsley [chopped finely]
• Salt and cracked black pepper
• 1 tablespoon oil and extra for frying
• Polenta for dusting


Method:
1. Cook lentils in plenty of boiling salted water for 30-40 minutes, or until tender. Drain well, add to blender and pulverise until smooth paste forms.
2. In a large bowl, combine remaining ingredients, mix and add lentil paste.
3. Using wet hands bring together and shape into small rissoles. Roll in polenta and set aside for 10 minutes.
4. Heat oil in fry pan and cook patties over low heat for 5-10 minutes each side, or until browned and heated through. Remove and keep warm.


Note: Serve hot with tomato relish or sweet chilli sauce, or as part of a dip platter.
