Ingredients: • 180g dark chocolate • 180g FreshLife Almonds Natural • 180g FreshLife Dates • 5 egg whites • 250g castor sugar • ¼ teaspoon lemon juice
Method: 1. Preheat oven to 175°C and grease and line a 23cm flan tray with baking paper. 2. Chop the chocolate and almonds and finely dice the dates and set aside. 3. In a large bowl beat eggs whites until soft peaks begin to form and gradually add sugar and lemon juice until soft peaks hold. 4. Gently fold in chocolate, nuts and dates, mix until just combined. 5. Fill flan tin, smooth top and bake for 45 minutes. Allow cake to cool before removing onto plate. 6. As the cakes cools down it will collapse. If this does not happen, gently tap centre to cause it to cave in. Top with thickened cream and dust with chocolate/cocoa powder, and serve with fruit.
Note: This is a decadent, chewy cake similar to a meringue which makes it a suitable dessert cake.
