Ma'amoul is a cookie like, nut filled pastry. These Middle Eastern cookies are customarily prepared on Palm Sunday and served after Easter Sunday to visiting guests. They are commonly served with sugared chickpeas and almonds.
Ingredients 2 cups plain flour 1 cup semolina 250g butter, melted 3 tablespoons milk 1/4 teaspoon cinnamon ¼ teaspoon rose water 2 ½ tablespoons sugar 2 tablespoons Pistachios, chopped finely 2 tablespoons FreshLife Walnuts, chopped finely Icing sugar for dusting
Method 1. Add plain flour and semolina to bowl and mix to combine. 2. In a separate bowl beat butter for 1 minute, slowly add dry flour and mix.
3. Add milk, cinnamon and rose water. Using your hands, bring dough together and roll into 12 portions.
4. Combine sugar and nuts and mix.
5. Roll portions of dough into small circles, flatten and drop 1 teaspoon nut mixture in centre.
6. Fold and press dough together to seal the filling, forming into balls. Repeat with remaining dough and nut mixture.
7. Bake in 190°C preheated oven for 25 min, when slightly cool dust with icing sugar.
