It is baked in a special wooden mould that has the orthodox Easter symbols carved into its sides. Today, flower pots with a whole in the middle are substituted. Ingredients 1 cup full cream 125g unsalted butter, melted 1 cup castor sugar 4 eggs 300g ricotta cheese ½ cup sour cream ½ cup FreshLife Natural Almonds, chopped roughly ½ cup FreshLife Raisins Fresh fruit to serve Method 1. Combine cream, butter, sugar and eggs in bowl and whisk until fluffy. 2. Place bowl over saucepan of boiling water and continue whisking until cream has thickened. 3. Remove from heat, add ricotta and sour cream, and continue to whisk. 4. Once mixture is smooth add the almonds and raisins. 5. Line a mould (e.g. clean flower pot with hole in bottom) with dampened cheesecloth, pour mixture into mould, pull sides of cheesecloth up and over to cover. Place a heavy object on top of pasha to press excess liquid out. 6. Place mould in a pan to catch excess liquid and refrigerate overnight. 7. Unmould pasha onto plate and serve with fresh fruit and berries.
