Hot Cross Buns

A traditional English / Australian Easter treat. A time consuming treat, but well worth the wait!

Ingredients
½ cup milk
½ cup water
½ teaspoon salt
½ cup brown sugar
30g yeast
4 cups plain flour
1 level teaspoon cinnamon
½ teaspoon mixed spice
60g butter
1 cup FreshLife Sultanas
1 teaspoon mixed fruit peel
1 egg
Extra flour for kneading

Cross Mixture
2 tablespoon self raising flour
1 tablespoon water

Glaze
1 tablespoon sugar
1 tablespoon water
¼ teaspoon gelatine


Method
1. Place milk, water, salt and 1 teaspoon of brown sugar into small bowl, mix to combine and add yeast into liquid. Mix to dissolve and place in 80°C preheated oven. Allow mixture to prove for 10-15 min.

2. In a large bowl, combine flour, cinnamon and mixed spice. Using fingers rub butter into flour, make a well in center and add remaining brown sugar, sultanas, mixed peel, egg and the liquid yeast mixture. Mix to form soft dough.

3. Empty dough on well floured surface; knead until dough is smooth and soft.

4. Place in large buttered bowl, cover with a heavy tea towel and place back into oven (80°C)and allow mixture to double in size.

5. Punch dough down and divide into 15 even portions, roll into buns. Arrange buns on baking tray so that they are touching each other.

6. Mark a cross on each bun with piping mixture and place tray back in oven (80°C) to allow them to double in size.

7. Remove tray from oven and increase heat to 220°C. Return tray to oven and bake for 20 mins.

8. Glaze while hot and still in tray

Cross Mixture
1. Mix water and flour until a smooth paste is formed. Place into small plastic bag, pierce a whole in end and add mark a cross on buns.

Glaze
1. Place ingredients into saucepan and heat until ingredients have melted and are well combined. Brush syrup over hot cross buns as soon as they come out of oven.


Note: Best served warm – can be reheated any time.
